Enchilada Lasagna

I made this for dinner a couple of nights ago based on what we had in our garage pantry + one rotisserie chicken.  All I can say is : YUM!  It instantly became the new Giustino Family Favorite.  Here is the easy-peasy recipe.

You Will Need:

1 rotisserie chicken, skin removed and shredded
1 can black beans, drained
1 can chipotle corn, drained
1 bag Trader Joe's Fire Roasted Peppers and Onions (if you don't have Trader Joe's, I am sorry for you - it's amazing.  The bag is strips of red, yellow and green peppers, and sliced onions all fire roasted.)
1 large can enchilada sauce (I used Rosarita brand)
1 1/2 cups shredded cheese of your choice (I used a Southwest blend, which was sharp cheddar and pepper jack)
7 corn tortillas
1/2 tbsp chipotle pepper
handful of sliced olives

Directions:
Take off the skin and shred your rotisserie chicken, set aside
In a large skillet start cooking frozen peppers and onions.  Add in drained corn, black beans and chipotle pepper.  Let simmer together about ten minutes.  Add in all of your shredded chicken, and half of the enchilada sauce.  Cook together another five minutes.

In an oven safe dish pour a small amount of your remaining enchilada sauce on the bottom, and use 2 1 /2 of your enchiladas to cover the bottom.  I tore them into pieces to make it fit.  Add half of your veggie/chicken/enchilada sauce mixture, and handful of cheese.  Pour a little bit of enchilada sauce on top.  Make another layer of 2 1/2 tortillas, and add the rest of your mixture, more cheese and a bit more sauce.  Shred the remaining tortillas and add the remaining enchilada sauce and cheese and sprinkle some sliced olives on top.  You're basically putting it together like you would a lasagna.

Bake at 350 degrees for 30 minutes.

I also made a completely vegan version for my husband, by simply omitting the chicken and cheese.  It was also super tasty!!
