Mocha Chip Truffle Cookies

Yum! These are definitely the cookies I'll be bringing to the cookie exchange next week! They are so good it's kind of ridiculous. BUT, if you don't like chocolate (although how could you not?!) you won't like these - they're very chocolatey!

Ingredients:
½ cup butter (1 stick)
1½ cup semisweet chocolate pieces
1 tabespoon instant coffee crystals
¾ cup sugar
¾ cup packed brown sugar
2 beaten eggs (although I used ½ cup egg beaters.)
2 teaspoons vanilla
2 cups all-purpose flour
⅓ cup unsweetened cocoa powder
½ teaspoon baking powder¼ teaspoon salt

Directions:
1. In a medium saucepan melt butter, and ½ cup of chocolate pieces over low heat. Remove from heat. Stir in coffee crystals; cool five minutes. Stir in sugars, eggs and vanilla.
2. In a medium mixing bowl combine flour, cocoa powder, baking powder and salt. Stir into coffee mixture. Stir in the remaining (1 cup) chocolate pieces. Let mixture sit for fifteen minutes to become more workable.
3.Drop dough by rounded tablespoons onto Silpat.
4. Bake in a 350 degree oven for ten minutes.

Makes 3 dozen cookies
