Leila and I were out all morning, and I did not feel like going out again this afternoon. Only problem was we didn't have anything for dinner. I scoured the garage pantry and the freezer and threw some random things into the crockpot, and dinner turned out delicious!!
Even my toughest food critic gave it her approval:
Ingredients:
*2 boneless, skinless chicken breasts (frozen)
*1/2 jar Trader Joe's pesto sauce
*1 brick of reduced fat cream cheese
*1 can of diced tomatoes, with juices
*1/2 jar of sweet red and yellow bellpeppers
*handful (maybe 1/3 cup?) Italian seasonings
Instructions:
Throw all ingredients into the crockpot, and cook on high for 3 hours (or low for 6) Serve over your favorite pasta - I used bowtie. Voila. Super easy and tasty!
