I also spent a lot of time in the kitchen! I got a fabulous Kitchenaid mixer the day after Thanksgiving, that I hadn't yet used so I decided it was time to take it out of the box and make something delicious...I made brownies, FROM SCRATCH! Not a thing came out of a box! (Ok, except the flour and sugar but that doesn't even count!) The brownies were moist, chewy and all-around yummy! They got rave reviews from everyone who tried them. The best thing about the brownies - they had spinach and carrots in 'em!
The recipe for the brownies came from my current favorite cookbook, "Deceptively Delicious." A while back (for our Halloween party, actually) I made the DD mac'n cheese with sweet potatoes and squash, and that got great reviews, too! I also made Leila a DD grilled cheese sandwich for lunch yesterday, with sweet potatoes and she loved it. (Although to be honest, she loves anything with sweet potatoes!) My only complaint about "Deceptively Delicious" is that the prep times aren't accurate. The brownies said 15 minute prep time, but by the time I pureed the spinach, pureed the carrots, melted the chocolate, seperated the egg whites and measured everything out it was more like 45 minutes. Oh, well - the end result was great! For dinner I made super healthy chicken saltimboca with brocolli, cauliflower and homemade garlic and herb mashed potatoes. Tony said on a scale of 1 - 10 dinner was an 11.2 The best thing about being in the kitchen for so long, besides making healthy food for my family was that I got to wear my kitschy apron. : )
